Corn Frittata with Brise du Matin Cheese

Ingredients

  • 30 mL (2 tbsp.) butter
  • 375 mL (1 ½ cup) corn kernels
  • 250 mL (1 cup) ham, diced
  • 4 green onions, chopped
  • 2 125 g (4.5 oz) Brise du Matin Brie cheeses, cut into small cubes
  • 8 eggs
  • 175 mL (3/4 cup) 35 % cream
  • Salt & pepper

Directions

  1. Preheat oven to 190 °C (375 °F).
  2. In a 9 inch nonstick pan, heat butter on medium heat and sauté the ham and the corn for 2 minutes. Add green onions and stir to combine.  
  3. In a large bowl, mix the eggs, the cream and season with salt and pepper. Pour the mixture into the pan and add the cheese. Cook over low heat for 5 minutes, then transfer to the oven for about 15 minutes, or until the frittata is firm when touched. Take it out of the oven and allow to cool for 5 minutes. Flip it over onto a plate and serve right away.
